NuCulture original recipe #11 – Introducing a new favorite: Pimento paprika, quinoa, and kale balls! These two super foods combined with our Pimento Paprika Spread are the perfect combination of flavor and packed with nutritious ingredients.
- 2 1/2 cups cooked quinoa
- 1/2 container NuCulture Pimento Paprika Creamy Cashew Spread
- 1/2 of one ripe avocado, mashed
- 3 green onions, sliced thin
- 3 cloves garlic, minced
- 1/2 tsp sea salt
- 1 cup steamed kale, chopped
- 1 cup breadcrumbs
- 1 tsp olive oil
Preheat oven to 375 degrees. In a large bowl, mix together cooked quinoa, avocado, NuCulture Pimento Paprika Creamy Cashew Spread, green onions, garlic, salt, steamed kale, and breadcrumbs. Let the mix rest ten minutes to absorb the liquid. You want the batter to be moist, but not runny. Coat hands in olive oil and roll mixture into 1 1/2 inch size balls.
Bake 12 minutes. Flip balls and cook 13 minutes more until lightly browned. Serve over your favorite greens dressed lightly with olive oil, salt and pepper. Top with more NuCulture Pimento Paprika Creamy Cashew Spread.
