NuCulture original recipe #9 – What better way to warm up than with a south-of-the-border inspired Mexican Pasta Bowl featuring our Bacony Chipotle Creamy Cashew Spread?
We love this pasta dish because it can be anything you want it to be. Just add your favorite Latin inspired toppings to our spicy sauce and you’ve got the perfect healthy meal! The crisp cool veggies help balance the heat of this amazing no-dairy cream sauce.
- 8 ounces cooked pasta of your choice
- 1 tablespoon olive oil
- 1 onion diced
- 1 chipotle pepper in adobo sauce
- (only if you want your pasta sauce even spicier!)
- 1 cup vegetable broth
- 1 container NuCulture Bacony Chipotle Creamy Cashew Spread
- salt and pepper to taste
Black Beans | Corn | Red Peppers | Scallions | Cilantro
Sauté onion in olive oil until just caramelizing. Slice open one chipotle chili and scrape out and remove seeds and chop. Add the chili to the onions and stir. Pour in the broth and heat through. Add the NuCulture Bacony Chipotle Creamy Cashew Spread and melt until bubbly. Toss the cooked pasta with the sauce and serve in bowls loaded with your favorite toppings.
